Make a compote: put 3 apples in a pan with a little water (1 glass or 2). Stir well. When the apples start to soften, add half sachet of vanilla sugar. Add a little water if necessary. You will know if the compote is ready once the apples are no longer hard. It does not matter if there are some pieces left.
While the compote is cooking, peel and cut in four the last three apples, then cut the quarters in thin slices (they will be used to be put on the compote)
Preheat the oven to 410 ° F
Let the sauce cooler a little and put the puff pastry into the pie dish and prick it with a fork.
Pour the compote on the puff pastry and place the apple slices forming a spiral or several circles, to choose! Put slices of butter on top.
Put in the oven and cook for 30 minutes max. Monitor the cooking. You can add a little vanilla sugar to the pie while it's cooked to caramelize a little and even nuts.
