Chorizo Omelet

This recipe is a whole meal by itself. Perfect for brunch.


  • 4 Eggs

  • 1 Dry cured Chorizo

  • Salt and pepper

  • Oil 1/2 Tablespoon

  • Cherry tomato, optional (A hand full)

  • Cheese (your favorite)


Step 1

Beat eggs in bowl until blended. Add salt and pepper.

Step 2

Slice the chorizo ( not too thin not too big).

Step 3

Place a small non-stick frying pan on a low heat .

Step 4

Place the chorizo slices on the pan for about 5 min lower heat on each side. Keep them warm.

Step 5

In the same pan, add ½ tablespoon of oil. Then gently add the eggs.

Step 6

When top surface of eggs is thickened and visible liquid egg remains, sprinkle over the chorizo.

Step 7

Gently push cooked portions from edges toward the center with inverted turner, then fold it over in half.

Step 8

Slide the omelet in a plate, add the cherry tomatoes and the cheese. Enjoy!
