Dried Morels Omelet

For 4 persons

Prep. Time: 25 minutes - cooking time: 20 minutes


8 eggs

10 grams dried morels

1 shallot

Chopped parsley

25 grams butter

Salt and pepper

Step 1

Soak the dried morels in lukewarm water for 15 minutes and drain. Place them in boiling water for 10 minutes. Rinse and drain. Chop the morels if required.

Step 2

Beat eggs in bowl until blended. Add salt and pepper.

Step 3

Brown in a pan the morels and finely chopped shallots with butter. Add the eggs.

Step 4

Gently push cooked portions from edges toward the center with inverted turner. When top surface of eggs is thickened and no visible liquid egg remains, fold omelet in half with turner.

Step 5

Slide the omelet in a plate and enjoy!
