Duck Breast can be a bit tricky to cook. Here are some advice on how to make it crispy on the outside and tender on the inside!
Rinse the duck and with a sharp knife, cut a grid on the skin of the breast (be careful to not cut the meat, stay on the skin only). Season both side with salt. Let it rest for 15 minutes at room temperature. Dry the breasts with a paper towel, the more it's dry better the roast will be.
In a pan, on medium heat, add 1 tablespoon of duck fat and start cooking your duck breasts on the skin side down for 6 minutes. Then, flip it over and cook for about 4 minutes.
