French Onion Soup

Who did not heard about the famous French Onion Soup?! It's so traditional and so easy to make, you won't believe it! Grab your apron and start cooking!


Ingredients:

  • 3lbs of yellow oignons (about 4 or 5 big onions)

  • 6 tablespoons of unsalted butter

  • 1 Glass of dry white wine

  • 1/2 teaspoon of flour

  • Salt & pepper

  • Dry herbs: bay leaves, thyme ... (optional)

  • A dash of cognac

  • 2 quarts beef stock

  • French bread

  • 1 medium clove garlic

  • 1 pound of Gruyere or Comté Cheese


Step 1:

Mince all of your onions. Once it's done, add the butter in a big pan on medium heat and start cooking your onions. Tip: add a tiny bit of natural oil to prevent the onions from burning. Add salt and stir regularly for about 30 minutes.


Step 2:

Add the dry white wine to the mixture, the flour, and the stock. You can also add a bouquet garni (dry herbs, thyme, bay leaves, rosemary...). Let simmer for another 20 minutes. (Optional: add a small glass of cognac!)


Step 3:

Grill up some toast and rub garlic on it. Place the soup in individual bowls, place the bread in the center and cover with freshly grated cheese.


Step 4:

Place your bowls in the oven on broil for about 2 to 3 minutes depending on your oven.
