French Palmier Cookies

Step 1:

Roll down your pastry roll on a sheet. Cut the size of the pastry to obtain an even rectangle and sprinkle it with sugar

Step 2:

Fold the bottom side of the pastry (about 1-1/2") toward the center, do the same with the upper side. Repeat until it meets in the middle (watch the video to understand how to roll the pastry).

Step 3:

Brush the top of the pastry with egg wash and fold one las time. Chill the pastry in the freezer for about 15 minutes.

Step 4:

Heat oven to 400 degrees F. Slice the folded pastry (about 1-1/2" cut) and bake for 12 to 15 minutes.
