Orange Duck

Ingredients:
1 tablespoon of duck fat
1 teaspoon of flour
2 teaspoon grated orange zest
2 tablespoons of Grand Marnier
1 teaspoon of sherry or balsamic vinegar
Cayenne
1 tablespoon of orange marmalade
1 cup of duck or chicken broth
1 tablespoon of butter
Step 1:
Rinse the duck and with a sharp knife, cut a grid on the skin of the breast (be careful to not cut the meat, stay on the skin only). Season both side with salt. Let it rest for 15 minutes at room temperature.
Step 2:
In a bowl, mix your orange zest with your Grand Marinier, vinegar, marmalade and a pinch of cayenne. Last but not least add your cup of duck or chicken broth.
Step 3:
Back to the duck: dry the breasts with a paper towel, the more it's dry better the roast will be.
In a pan, on medium heat, add 1 tablespoon of duck fat and start cooking your duck breasts on the skin side down for 6 minutes. Then, flip it over and cook for about 4 minutes.
Step 4:
Put your duck breasts aside, use the same pan on medium heat again, and throw your flour in there., and add your sauce and stir well. Let it reduce and turn an low heat and add your butter and let it dissolve into your sauce.
Step 5:
Slice your duck breasts and drizzle them with the sauce and enjoy!
