Preheat your oven at 425 degrees F. Roll out your dough in a pie dish. With a fork, pinch your dough and let it rest in the fridge for a bit.
Cook the diced pancetta in a medium heat pan until you obtain a nice brown color. Keep the grease form the pancetta and cook your onion until they're tender.
Whisk together eggs, cream, milk, salt, and nutmeg. Put your dough out of the fridge and place the diced pancetta and cheese on it. Then, pour the mixture into the pastry shell.
Bake for 30 to 35 minutes minutes in the preheated oven.
