Salad Lyonnaise

There is nothing more refreshing than a good salad full of delicious vegetable in summer! Try our Salad Lyonnaise!
Ingredients:
1 head of frisee lettuce or arugula
8 oz of duck gizzards
4 large eggs
1 tablespoon of chives
1 tabslespoon of minced shallots
1 tablespoon of mustard
Salt & Pepper
1/4 cup of vinegar
1/2 cup of olive oil
Step 1:
Cut the root of the salad, rinse it out, and let it dry. Then, cut it the way you like it, in small or large pieces, you decide.
Step 2:
In a bowl, add together your minced shallots, mustard, salt & pepper and vinegar. Then, add little by little your olive oil. Your dressing is ready
Step 3:
In a medium heat pan cook your gizzard.
Step 4:
In mixing bowl, add your ingredients together: salad, gizzard, dressing and hard boiled or poached egg.
