Warm Goat Cheese Salad

A salad is so refreshing, it's the perfect starter. You'll see the Warm Goat Cheese Salad on many Bistro's Menu in France. It is a favorite, and here is how you can make it:
Ingredients (for 4 people):
2 Crotin de Chavignol (Goat Cheese)
Butter
1 bag of Pine Nuts
1 box of Cherry Tomatoes
Balsamic Vinegar or Raspberry Vinegar
1 1/2 tablespoon of Mustard
1 tablespoon of Honey (optional)
1 Salad
1 Baguette
Salt & Pepper
Step 1:
Place the pine nuts on a cooking sheet and roast them in the oven at 425 degree for a couple of minutes (until golden).
Step 2:
Cut 4 pieces of bread and spread butter on one side. Cut the Crotin de Chavignol (goat cheese) in half and place it on the bread. Put it in the oven for about 10minutes or until the cheese has started to melt and has a golden color.
Step 3:
For the salad dressing: mix mustard with vinegar, honey, and salt&pepper. Gradually add the olive oil until you got a "foamy" consistency.
Step 4:
Final step, build your salad. Place the salad in the center of the plate and add the dressing. Cut the cherry tomatoes in half and sprinkle them with the pine nuts on top. Place your bread with cheese on the salad, and voilà, you're ready to eat!
